Rosemary Potatoes with Coarse Celtic Sea Salt

Ingredients

  • 500 g red-skinned potatoes or new potatoes
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon Coarse Celtic Sea Salt Good Routine® Wellness Foods
  • 1 sprig fresh rosemary or ½ teaspoon dried rosemary
  • Black pepper, to taste
  • 1 crushed garlic clove, optional

Step-by-step preparation

  • 1. Preheat the oven
  • Set the oven to 200°C.
  • 2. Wash the potatoes
  • Wash the potatoes well, especially if cooking them with the skin on.
  • 3. Cut the potatoes
  • Cut into quarters or even pieces so they bake evenly.
  • 4. Prepare the marinade
  • In a large bowl, mix the olive oil, coarse Celtic sea salt, rosemary, pepper and garlic, if using.
  • 5. Season the potatoes
  • Add the potatoes to the bowl and toss well, so each piece is evenly coated.
  • 6. Arrange on the tray
  • Place the potatoes on a baking tray lined with parchment paper, in a single layer.
  • 7. Bake
  • Bake for 30–35 minutes, turning the potatoes once halfway through.
  • 8. Finish
  • Remove the tray from the oven and sprinkle, if desired, a little more coarse Celtic salt for a crunchy texture.
  • 9. Serve
  • Serve the potatoes warm, as a side dish or savory snack.
