Quinoa Salad with Vegetables, Lemon and Chia

Ingredients

  • 100 g cooked quinoa
  • 1 tablespoon Organic Chia Good Routine® Wellness Foods
  • 3 tablespoons water or lemon juice for hydrating the seeds
  • ½ cucumber
  • ½ bell pepper
  • 1 tomato or 6 cherry tomatoes
  • 2 tablespoons fresh parsley
  • 2 tablespoons olive oil
  • Juice of ½ lemon
  • Fine Celtic salt, to taste
  • Pepper, to taste

Step-by-step preparation

  • 1. Hydrate the chia seeds
  • Place the chia seeds in a small bowl with water or lemon juice. Let them sit for 10–15 minutes, until they develop a gel-like texture.
  • 2. Prepare the quinoa
  • Use quinoa that is already cooked and cooled. If cooking it fresh, let it cool before assembling.
  • 3. Chop the vegetables
  • Cut the cucumber, bell pepper and tomatoes into small cubes.
  • 4. Prepare the dressing
  • Mix the olive oil with lemon juice, salt and pepper.
  • 5. Combine the ingredients
  • Place the quinoa, vegetables and parsley in a bowl.
  • 6. Add the hydrated chia
  • Fold in the hydrated chia seeds. They will lightly bind the dressing and add an interesting texture.
  • 7. Mix gently
  • Pour in the dressing and mix without crushing the vegetables.
  • 8. Serve
  • Serve the salad cold, as a light meal or a functional side dish.
