Energizing Granola and Cashew Bites
Ingredients
- 1 cup Organic Granola with Goji and Raisins
- ½ cup soaked cashews or almonds
- 2 tablespoons coconut butter
- 1 tablespoon date syrup or date paste
- ½ teaspoon natural vanilla extract
- 1 tablespoon coconut flakes, optional
- 1 tablespoon hemp seeds, optional
Step-by-step preparation
- 1. Soak the cashews
- Leave the cashews in water for 2–3 hours, then drain well. For a quicker version, use raw unsoaked cashews.
- 2. Add the ingredients to the processor
- Add the granola, cashews, coconut butter, date syrup and vanilla to a food processor.
- 3. Process the mixture
- Blend in short pulses until the ingredients bind together. The texture should be slightly crunchy, not a complete paste.
- 4. Check the texture
- Press a bit of the mixture between your fingers. If it crumbles, add a little more date syrup or coconut butter.
- 5. Shape the bites
- Take a teaspoon of the mixture and roll it into balls between your palms.
- 6. Add the topping
- Roll the bites in coconut flakes or hemp seeds.
- 7. Chill
- Place the bites in the fridge for at least 30 minutes.
- 8. Serve
- Serve as a snack between meals, in a lunch box or before an active day.
