Quinoa, Chickpea and Raw Vegetable Salad with Lemon Dressing

Ingredients

  • 100 g Good Routine® Wellness Foods Organic Quinoa
  • 200 ml water
  • 150 g cooked chickpeas
  • ½ cucumber
  • 8–10 cherry tomatoes
  • ½ bell pepper
  • 2 tablespoons fresh chopped parsley
  • 2 tablespoons olive oil
  • Juice from ½ lemon
  • Fine Celtic salt, to taste
  • Pepper, to taste

Step-by-step preparation

  • 1. Rinse the quinoa
  • Rinse the quinoa under cold running water for 30–40 seconds, to remove the slightly bitter taste.
  • 2. Cook the quinoa
  • Put the quinoa and water in a pot. Simmer over low heat for 12–15 minutes, until the water is absorbed.
  • 3. Let it rest
  • Turn off the heat and let the quinoa sit covered for 5 minutes. Then fluff it with a fork.
  • 4. Prepare the vegetables
  • Cut the cucumber, cherry tomatoes and bell pepper into small pieces.
  • 5. Prepare the dressing
  • Mix the olive oil with the lemon juice, salt and pepper.
  • 6. Assemble the salad
  • In a large bowl, combine the quinoa, chickpeas, vegetables and parsley.
  • 7. Add the dressing
  • Pour the dressing over the salad and toss gently.
  • 8. Serve
  • Serve immediately or chill for 10 minutes to let the flavors settle.
